Most chicken-keeping guides describe the deep litter method like it’s a passive miracle: throw down some shavings, let the chickens scratch around, and nature does the rest. That’s not wrong, exactly, but it leaves out enough that first-timers end up with a wet, ammonia-reeking coop by February and no idea what went sideways.
Here’s the actual picture. Deep litter works brilliantly when you do it right. When you don’t, it’s just a pile of dirty bedding you’re calling something fancier.
What Deep Litter Actually Is
The goal isn’t just accumulating bedding. You’re building a living microbial community in the floor of your coop, a community that actively breaks down manure, generates modest heat, and eventually produces something close to finished compost. The chickens help by scratching, which aerates the material and incorporates fresh manure rather than letting it sit in concentrated patches.
It works because chicken manure is nitrogen-dense and, on its own, too wet and hot to decompose cleanly. Carbon-heavy bedding, like pine shavings, straw, or dried leaves, balances that equation. The key ratio is roughly 25-30 parts carbon to 1 part nitrogen, which happens to be what good composting calls for anyway. The chickens scratch, microbes work, and if conditions are right, you end up with warm, earthy-smelling litter rather than the sulfur bomb you’d expect.
That smell test isn’t incidental. It’s your primary diagnostic tool. Fresh, active deep litter smells like a forest floor, maybe faintly like earth or dried hay. Ammonia means too much nitrogen or not enough aeration. A sour smell usually means moisture has taken over. Both are fixable, but you have to catch them.
Setting It Up Right the First Time
Start in fall if you can. Cooler temperatures mean microbial activity ramps up gradually, and you’ve got all winter for the litter to establish before summer heat adds pressure.
Start with 4 to 6 inches of carbon material. I prefer large-flake pine shavings, specifically Tractor Supply’s Southern States brand or the compressed bales from Amazon that expand to several cubic feet. Straw works, but it mats faster and packs tighter than shavings, which is a problem. Shredded paper is a last resort because it also compacts and gets slick when damp. Dried leaves are excellent if you have them in quantity, and free is always right.
Your coop needs to be dry before you start. Not just “not visibly leaking” dry. Check your roof line, your ventilation placement, and whether the ground around your coop foundation sheds water or holds it. A coop sitting on poorly drained ground will wick moisture up from below and you’ll fight it constantly. I found this out the hard way with my first coop, a converted garden shed with a wood floor set almost at grade. By January the litter was saturated regardless of what I added on top.
Ventilation is the other thing people underestimate. Deep litter requires air movement to stay aerobic. Aerobic decomposition is what produces that mild forest-floor smell. Anaerobic decomposition, which happens when moisture and lack of air starve out the oxygen-dependent microbes, is what produces ammonia and that eye-watering stench. A rule of thumb: at least 1 square foot of ventilation per 10 square feet of coop floor, positioned up high so it pulls moisture out without creating a cold draft at bird level.

Deep litter is not no-work. That’s the version hatchery websites sell. The honest version is that it’s lower-work than frequent full cleanouts, but it requires regular attention.
Every week or two, stir the litter. A garden fork works fine. You’re incorporating manure, breaking up wet patches, and reintroducing air. If you’ve got a spot under the roost that’s building up fast, that’s your high-nitrogen zone, so either stir it more aggressively or throw an extra handful of dry shavings on it.
Add carbon material whenever the litter starts looking wet, dark, or packed. Don’t wait for it to go wrong. Thin fresh layers, maybe an inch or two at a time, are more effective than trying to compensate after the fact with a thick dump.
During wet seasons or in humid climates, some keepers add a sprinkle of agricultural lime (barn lime, not hydrated lime) to manage moisture and pH. It helps. About a cup scattered across the surface every few weeks during damp stretches keeps things balanced without nuking the microbial community. Tractor Supply sells it in 50-pound bags for around $10.
The Contrarian Take: Dirt Floors Are Better Than Wood
Here’s one people push back on. If you’re building a coop from scratch, put it on a dirt floor. Not concrete, not wood, not pavers. Dirt.
Wood floors rot. Concrete is cold, hard to drain, and actually inhibits the microbial community you’re trying to grow. Dirt floors let the coop ecosystem connect with the actual soil microbiome, improve drainage naturally, and won’t fail structurally after five wet winters. Yes, predators can dig in. Hardware cloth aprons (12 to 18 inches buried at an angle away from the coop) solve that. The structural concern is real but solvable. The rotting wood floor concern is expensive and permanent.
I’ve had three coops. The only one I’ve never had a moisture headache with has a packed-earth floor.
When to Do the Annual Cleanout

Most deep litter setups run a full cleanout once or twice a year. Spring is the natural time: you’ve got a full winter’s worth of partially composted material, temperatures are rising (which accelerates the microbial activity in the pile’s final weeks), and the garden needs amendments.
The litter is ready to pull when it looks like dark, crumbly material with minimal recognizable manure or bedding structure. It will not smell like ammonia at this point; if anything, it smells like good compost. This stuff is genuinely good for the garden, too. High nitrogen, some phosphorus, decent organic matter. Pile it, let it hot-compost for another 4 to 6 weeks if you want to be safe with root vegetables, or use it directly on ornamentals and flower beds.
After cleanout, leave a shovelful of the old material behind. It’s inoculated with the microbes you’ve been cultivating, and it jump-starts the new litter faster than starting from scratch.
The deep litter method genuinely works, and it genuinely reduces the labor of coop maintenance over the long run. But it rewards the keeper who pays attention, not the one who walks away and hopes for the best. Get your moisture situation solved before you start, keep a bag of shavings within arm’s reach all winter, and trust your nose more than any schedule.
